This case study highlights the opportunity and economic, environmental and social value generated by one of the largest university restaurants in the country, MDining at the University of Michigan. The case describes MDining’s leadership team and its holistic approach to implementing local and sustainable food sourcing initiatives. The team’s challenges in implementing an ambitious local procurement program and the gaps in the ecosystem encourage students to discuss possible solutions. The case addresses the important role a university can play in improving food sustainability on campus, particularly through student clubs, projects, and employment and research opportunities. In a broader sense, the case highlights the challenges that large institutions may face in implementing local procurement and the role that institutions can play in ensuring sustainable procurement of food services.
